Clam Chowder

Serves 4
Total time: 4 hrs 15 mins

 

Ingredients:

  • 2x 6 ½ oz cans clams
  • ¼ lb salt pork or
    • Or ¼ lb bacon
  • 1 onion – chopped
  • 3-4 potatoes – pared & cubed
  • 1 ½ cups water
  • 1 ¾ tsp salt
  • tsp pepper
  • 2 cups half & half
    • Or 2 cups milk
  • 1 ½-2 tbsp cornstarch

Directions:

  1. Sauté pork/bacon and onion until golden brown;
    1. Drain excess fat
  2. Place clams in crock pot with pork/bacon along with all other ingredients except milk/half & half
  3. Cook on high for 3-4 hours
    1. Or low for 7-8 hours
  4. Add 1 cup milk/half & half and cornstarch one hour before serving
    1. Add remaining milk/half & half just serving

Variation:

Add cup of chopped celery, 1 clove garlic, 1 tbsp butter, one more can of clam, and 2-3 mashed potatoes.
