Serves 4-6

Ingredients:
- ½ cup green pepper – chopped
- ½ cup onion – chopped
- 2 tbsp butter
- Or 2 tbsp margarine
- 10 oz can cream of chicken soup
- 1 ½ cups milk
- 1 lb Velveeta cheese – cubed
- 10 oz broccoli – chopped
Directions:
- Sauté onion and green pepper with butter in saucepan
- Combine all ingredients on low in crock pot for 3-4 hours
Variations:
Potato Cheese Soup:
- Use red and yellow peppers and add black pepper and garlic powder. Omit broccoli and replace with potatoes.
- Mix the milk and the soup with a whisk until smooth before adding to crock pot.
- Wait until soup is hot before adding cheese and stir continuously until all cheese has melted.
