Stuffed Cabbage Soup

Serves 6
Total time: 10 hrs 15 mins

 

Ingredients:

  • 1 tbsp olive oil
  • 1 ½ lbs lean ground beef
    • Or 1 ½ lbs lean stew meat
  • 1 onion – finely chopped
  • 28 oz tomato juice
    • Or 28 oz crushed tomatoes
  • 2 beef bouillon cubes
  • cup barley
    • Or cup rice – rinsed & uncooked
  • 2 tsp sugar
  • 2-3 tsp sweet paprika
  • 6-12 garlic cloves – minced
  • 1 tsp pepper
  • ¼ tsp Tabasco sauce
  • 2 lbs cabbage – coarsely chopped
  • 3x 14 ½ oz cans beef broth

Directions:

  1. Warm oil over medium heat in saucepan, and
  2. Sauté beef and onions
    1. Drain fat
  3. Add to crock pot and mix:
    1. Tomatoes
    2. Bouillon
    3. Barley
    4. Sugar
    5. Paprika
    6. Garlic
    7. Pepper
    8. Tabasco
  4. Add cabbage to crock pot, followed by meat and onions mixture
    1. Don’t stir
    2. Top with beef broth.
  5. Cook on low for 8-10 hours

Variation:

Use cup brown sugar, cup lemon juice, Napa cabbage and omit Tabasco sauce. Add a bay leaf and 5-6 stems of dried thyme and only use 32 oz of broth.
