Ingredients:
- 1 tbsp olive oil
- 1 ½ lbs lean ground beef
- Or 1 ½ lbs lean stew meat
- 1 onion – finely chopped
- 28 oz tomato juice
- Or 28 oz crushed tomatoes
- 2 beef bouillon cubes
- ⅔ cup barley
- Or ⅔ cup rice – rinsed & uncooked
- 2 tsp sugar
- 2-3 tsp sweet paprika
- 6-12 garlic cloves – minced
- 1 tsp pepper
- ¼ tsp Tabasco sauce
- 2 lbs cabbage – coarsely chopped
- 3x 14 ½ oz cans beef broth
Directions:
- Warm oil over medium heat in saucepan, and
- Sauté beef and onions
- Drain fat
- Add to crock pot and mix:
- Tomatoes
- Bouillon
- Barley
- Sugar
- Paprika
- Garlic
- Pepper
- Tabasco
- Add cabbage to crock pot, followed by meat and onions mixture
- Don’t stir
- Top with beef broth.
- Cook on low for 8-10 hours
Variation:
Use ⅓ cup brown sugar, ⅓ cup lemon juice, Napa cabbage and omit Tabasco sauce. Add a bay leaf and 5-6 stems of dried thyme and only use 32 oz of broth.
