Beef-Barley Soup

 

Serves 8-10
Total time: 8 hrs 15 mins



Ingredients:

  • 2 lbs beef round steak
    • Or 2 lbs beef chuck – diced
  • 2 cups chopped carrots
  • 1 stalk celery – diced
  • ½ green pepper – diced
  • 1 onion – chopped
  • 16 oz can tomatoes
  • ½ cup corn
  • ½ cup green beans
  • cup barley
  • 1 tbsp dried parsley flakes
  • 1 tbsp beef bouillon granules
    • Or 2 beef bouillon cubes
  • 2 tsp salt
  • ¾ tsp dried basil
  • 5 cups water

Directions:

  1. Brown beef in saucepan
  2. Combine in crock pot:
    1. Carrot
    2. Celery
    3. Green pepper
    4. Onion
    5. Corn
    6. Green beans
  3. Add meat last
  4. Combine in bowl, mix, and add to crock pot:
    1. Tomatoes
    2. Barley
    3. Parsley
    4. Bouillon
    5. Salt
    6. Basil
  5. Add water
  6. **Do Not Stir**
  7. Cook on low for 10-12 hour
