Potato Soup

Serves 4-6
Total time: 7 hrs 10 mins



Ingredients:

  • 4 cups potatoes – cubed & peeled
  • 1 ¼ cups water
  • 2 tsp chicken bouillon
  • 1 cup celery – sliced
  • ½ cup carrot – chopped
  • ½ cup onion – chopped
  • 2 tbsp parsley – snipped
  • 1 ½ tsp salt
  • tsp pepper
  • 1 tsp dill weed
  • 4 cups milk
  • 3 tbsp flour
  • 2 tbsp butter
Garnish:
    • bacon bits


Directions:

  1. Combine in crock pot:
    1. Potatoes
    2. Water
    3. Chicken bouillon
    4. Celery
    5. Carrot
    6. Onion
    7. Parsley
    8. Salt & pepper
    9. Dill weed
    10. Butter
    11. Milk
  2. Cook for 3-4 hours on high
    1. Or 7-9 hours on low
  3. Blend flour with 1/2 cup milk stirring till smooth, then stir in soup.
  4. Cook, stirring constantly until smooth and bubbly.
Garnish:
    1. bacon bits
 

Variations:

Spicy!

Use chicken stock in place of water and bouillon, and add about 1/8 tsp red pepper flakes and 2 cups of cubed ham. Put everything but the flour, and milk in. Add flour, milk and include Velveeta cheese about 1 hour before serving.
