Cheese Burger Soup

Serves 8
Total time: 2 hrs 15 mins

 

Ingredients:

  • Cooking spray
  • 1 garlic clove – minced
  • 1 onion – chopped
  • 1 celery rib – chopped
  • 1 lb lean ground beef
  • 2 tbsp all-purpose flour
  • 3 cups canned chicken broth – divided
  • 1 cup low-fat evaporated milk
  • 8 oz Velveeta reduced fat cheese– cubed
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 24 baked corn tortilla chips – crumbled
 

Directions:

  1. Coat pan with cooking spray preheat medium-high heat
  2. Add:
    1. Garlic
    2. Onion
    3. Celery
  3. Cook 5-10 mins
  4. Coat slow cooker with cooking spray
  5. Add vegetables to slow cooker
  6. Keep pan hot and brown beef, breaking up meat with a wooden spoon as it cooks, about
    1. Cook 5-6 mins; pour off any liquid and add meat to slow cooker.
    2. Add to slow cooker
  7. Combine in a bowl:
    1. Flour
    2. ½ cup of broth;
  8. Stir until free of lumps
  9. Pour bowl into same pan and add remaining 2 ½ cups of broth
  10. Bring to a simmer and add to slow cooker
    1. About 3-4 mins
  11. Stir into slow cooker:
    1. Evaporated milk
    2. Cheese
    3. Paprika
    4. Salt & pepper
  12. Cook on low for 2-3 hours
  13. Crumble chips onto each serving
